Obviously having a backup is crucial no matter what you do. However, I can say that I have had good luck upgrading two separate instances of Xsan that originally date back to version 1.0/1.2. The upgrades happened as new patches and 2.0 became available, and have gone smoothly.

As a datapoint, I have/had volumes that are filled with 25TB worth of small to mid-size files (text/html files to hi-res tiffs) that took what was probably near 24 hours to upgrade the filesystem.
