The TeX-based braces have a modulated stroke (it goes thin and thick in different places). Scaling in one direction will distort the thick-thin relationships, scaling uniformly will effect the color (apparent blackness on the page). Your scaled fences started life as a monoline, but some vertical distortion is now apparent. Knuth really did know what he was doing when he designed TeX/Computer Modern.
