Not only that, the one I gave is a very different setting, it seems that

    defaults read com.apple.print.defaultpapersize DefaultPaperSize

returns the paper-size selected on the last occasion any paper-size 
selection
was made, while the one you suggest

    defaults read com.apple.print.PrintingPrefs DefaultPaperID

yields the proper paper-size. Why there are two different ones, I don't 
know...
