In short, the problem is that settings set in this file affect all GUI
apps on your Mac, potentially creating conflicts and misbehaviours. In
particular, in your case it's likely that some TeX-related paths set in
the ~/.MacOSX/environment.plist file for one application has taken over
the paths expected by i-Installer, causing it to fail.
