T2 is indended to be buildable on other Linux systems and in the future we'll continue to make it work on Solaris, OS X and Cygwin.
On other Linux Systems these days problems should arise seldomly, the cross compiler used for building is bootstrapped in the beginning of the T2 target build anyway and thus factoring out most problems caused by the host compiler.

I once build a "as much as possible" rootfs with about 800(!) packages cross build, including gtk+. But that was just a stability test and some months ago.
Maybe post the issues you run into to help and fix problem as they appear. However, we'll also soon provide cross built binary packages for all T2 supported architectures.
