One thing you might check is that the server box doesn't have a
software firewall set up. I went through similar machinations trying
to get some macs to see a printer I had connected to a GNU/Linux box
and the default RedHat install was blocking connections on a bunch of
ports needed by CUPS causing all kinds of problems.

P.S. Of course I wasn't able to actually get things working but I at
least got to the point where the clien boxes could actually talk to
the CUPS server.
