This is in the README file and the installation hints. *If* you chose
to install CUPS with the help of the "portable" package, and installed
via the "cups.install" script, you can reverse the installation and
restore the complete old configuration (including printcap) via the
"cups.remove" script...

Sometimes reading READMEs helps. A lot.
