I am beginning to see the light! Would you recommend the 4.10 RELEASE or
the 5.2.1 "New Technology Release" for someone just getting their feet wet
for the first time?

If you want to use OpenVPN in FreeBSD, you will need to recompile the kernel with tap driver enabled.
4.10 Release support tap driver after recompiled the kernel.
If you want to use PF in FreeBSd, need to use 5.x with another recompilation of the kernel.
