Can't help you with the iTunes issues, but I do know that this won't
work. The problem is that there's no prescribed order to the tags.
Think of them as being pulled out of a hat instead of in an ordered
list.

It's something of a shortcoming of the vorbis comment method of
tagging. You can have one ARTIST and a corresponding ARTISTSORT and
that works fine. The problem is that without an understood "order" to
the tags, there's no way to have more than one ARTISTSORT. You should
leave ARTISTSORT off of any tracks with more than one ARTIST tag.

You have two choices: Go back to your previous method of using a
separator, although it may not work well with iTunes and other
applications. Or, leave ARTISTSORT off of any track with more than
ARTIST and if that artist appears somewhere _else_ in your library with
an ARTISTSORT tag, then it will be sorted appropriately. You'll
probably end up with some artists in the library that are sorted
firstname/lastname - it's unavoidable.
