Envioroment variables set?

Hi ALL,

Please forgive me... I'm a newbie or noobie or what ever, to Linux!
Old hat at everything else :)

Where do I set enviroment variables? 

I want to set a CVSROOT=/blaa/blaa 

I know I have to do:

CVSROOT=/blaa/blaa
export CVSROOT


But where? There seems so many different places :(
