The easiest solution is to build PHP from source. This is what I do on our 
RH7 webservers, and it works fine with the Apache RPMs (although you will 
need to install apache-devel so PHP can find the APXS tool, and you may 
need other -devel packages so it can find headers).

An alternative would be to take an SRPM from another distribution
(www.rpmfind.net lists a few) and do an rpm --recompile, but that may
introduce subtle problems of its own.
