Kerio is terrific. It just works, and without much maintenance. It doesn't yet work with Snow Leopard though.

I am interested know what alternatives to SquirrelMail people are using,
why, whether it was a good choice and how difficult it is to use a

Before I gave up on hosting our own email and moved everything over to
Google Apps for Education, we used RoundCube (
http://roundcube.net/)
quite successfully. Before that, we used the built-in SquirrelMail but
with a plugin to show quota usage. MOXS 10.5.7 broke that arrangement
and forced the complete migration to RoundCube, which I had been
testing for a while.
RoundCube is really easy to setup. For a guide (but you probably won't
need it if you are familiar with MySQL and Apache), see this link:
http://www.roundcubeforum.net/general-discussion/3673-guide-installing-roundcube-mac-os-x-leopard-server.htmlI'm not going to vouch for its correctness or currentness as I didn't
use it. But it's something.

If you are willing to consider a commercial alternative, Kerio is a pretty good choice. How many clients do you need to support?
