I agree with Hassan. The "ubuntu-minimal" package should include mandatory package for a server environment with a maximum level of security (no ssh, samba, ... by defaut) But the package should remain on the CD.
I think that additionnal server template should be accessible once the minimal installation has been conducted through a ncurse interface.
for example: # server-reconfigure - internet access - wireless
- samba/nfs server - ssh server - LAMP server

I can't call My privat home server a "server" like I have at work. I never seen a server from Dell/HP/Sun with wireless. My idea is not to have these packages installed by default like openssh-server it's not
installed by default for security reason (you can install it with apt-get without internet connection because you can get it from the CDRom). So the same things should be for wpa* or ppp*
The main goal for Ubuntu Server is to be robust server disribution
without extra.
It's only a suggestion.
