i had faced issues RHEL 5 amd xen bundled with base OS on my x2200
,which is still pending with Redhat , now i am using xen-unstable
sucessfully inside RHEL 5.0 .

This looks like a VMware problem because I run RHEL5 under parallels
on my Mac and I can set the monitor to generic LCD 1280X1024. It
works as expected.

given the typical redhat approach: it will be in RHEL 6 and it will
never be in RHEL 5 unless they are forced to step up from Xen 3.0 by
some serious issue (this implies they cannot backport needed patches to
Xen 3.0).
Not saying anything one way or another, but note that up until the last
minute, xen 3.1 was still called xen 3.0.5...
