Xv (or XVideo) is an extension to the X window system that gives access to the video playback capabilities of the graphic chipset. It allows to do some of the video processing in hardware that otherwise would have to be done by the CPU. For the nVidia chipset it's mainly color space conversions. From the users point of view, you get better video playback with almost no framedrops for fullscreen DVD playback.
