Actually I'm still missing something: simply dropping an appropriate gvim.desktop file in /usr/share/applications/ does not make gvim appearing in the "Open With" menu. /usr/bin/update-desktop-database should be called before that happens. Strange enough however, neither emacs21 nor abiword invoke update-dekstop-database in their postinst script ... I will investigate this issue more in detail this evening or tomorrow.
