It will ultimately come down to who's adminstering the mail server,
and how aware of the details they are.
Any MTA, out of the box, can handle simple sites just fine, and can
have features added as needed.
They'll have have their own idiosyncatic demands on your system,
their own learning curve, and their own methodology for getting
work done. So, you'll have your work cut out for you regardless
of your choice. :)
That being said: I've been using qmail for almost ten years now,
and can endorse it for most environments. The qmail support community
can be a bit abrasive, but if you follow the Life With Qmail
website, they'l be more accepting. :)

However, I know nothing of your current environment, other than
exchange is involved. More detail would be useful: number of users,
how much traffic is being handled, etc.
