or did you mean trap the event of incoming call ?

If so then your Canvas's hideNotify() will be called (as the Canvas is
hidden when the incoming call information is displayed), only if it is the
current Displayable when the call occurs.

as far as i know pauseApp() is not triggered on incoming call for the s60.

Like Andrea said though, you cannot interact with the call in any other way.
