I've noticed this as well - I grabbed a hold of Foobar2000 when I heard that it did Itunes-compatible tagging, and it seems to werk pretty well, but Ephpod doesn't seem to read the tags at all. I've just been using Sveta Portable Audio to copy the tracks over for the moment - it has an iPod add-on that reads the MP4 tags when it copies to the iPod. I assume that it's something that will appear/be fixed in an upcoming version...
