Well, one way to really surprise the players is to run the "infection" as
an actual disease with something around an 80% mortality rate. Make people
who are bitten roll vs HT-2 or lose a point of HT. This continues until HT
0, when they become zombies, or until they are at full HT and roll 3 or so
successes and fight it off.
This can really freak out players who go off the movies and shoot people
at the first sign of infection; then find out later on that some people
managed to fight it off and realize they may have murdered potential
survivors.

Just some thoughts.
