Hmm, Ok. I thought you might have had a default font with no italics  
available...

I've now tried your approach with a plain CVS-Emacs: Same problem, it  
doesn't work. Looks like there's something fishy with your approach  
and not with Aquamacs...

The newsgroup comp.emacs may be a good place to ask.
