Thank you for your hint. That did it.

Now I know what to do (and the correct sequence of actions):

Before removing the label at "Option key for Meta ..." it is necessary
to remove a possible label at the menu entry "Emulate some ..."
in this menu.

If this sequence of actions is not observed and the label at
"Option key for Meta ..." removed first, the entries "Emulate some ..."
are greyed and not accessible.
