How can I set a monospaced font? Would be more useful for programming.

Options -> "Show Fonts".

By the way - the font is monospaced by default, except for text modes - in which you shouldn't be editing programs!

Problem is that proportional fonts don't display well in Japanese for ex. I've tried the default settings for a number of emacs- carbon versions and I always end up putting a monospace font for _everything_ because the display of Japanese is positively ugly in proportional.

If you are looking for monospace fontsets which are compatible with Japanese language, I recommend you to examine carbon-font.el by our group. It arranges re-scale factors so that both Western and CJK (Chinese, Japanese and Korean) fontsets are monospaced. I think Aquamacs also contains carbon-font.el.
