I remember when I first tried Aquamacs, I had the same problem and I managed to fix it by using osaka as the default font (which then affects the display of French characters, but it is less bad than for Japanese ones).

OK, could you produce a short description with two screenshots (one of Aquamacs or Emacs, one of another Mac app whose font is nice)? This is most likely a problem in plain GNU Emacs, too.

Now is the time to report and fix such bugs!
