Fonts are available via a direct menu entry and a font panel just like in other Mac apps. There is a whole customization system which you can reach via Aquamacs -> Preferences just like in any app. This is, however, not shown nicely in a dialog, with normal widgets. To change that, it would take a mechanism to create preference dialogues automatically - because Emacs packages are free to add further preferences. That's technically doable, but probably a lot of work. Ideally, it would be done with SWT or something similar, so the user interface would be portable, but would look and behave like in other apps.
