Stressed, unstressed, what? One symbol is enough. If a student knows French, the 'eu' will provide a scaffold so close to the inverted V (or squiggly big U) sound itself that the jump to the real sound will not be a 'major breakthrough'. Lots of proximate but inaccurate sounds are resolved by neighboring sounds, as you know. The written 'zh' in pinyin is resolved by listening. The 'x' in 'xin' is resolved by listening and a willingness to approximate the accepted native pronunciation. I mean EVERYONE has studied IPA, and EVERYONE's listened to Jones tapes.
