How about something like the MSR Superfly Ascent? http://www.msrcorp.com/stoves/superfly_ascent.asp It's propane, so no spilling fuel (which could happen with solid fuels also). It's supported from above, so it should stay relatively level even in swells. Not too sure I would like any stove in heavy seas. For that situation, maybe you could use chemical toe heaters or something. Keep in mind, I'm not into sailing, it's been a long time since I've been at sea.
