You are correct, the softproof honoring SWOPv2 does not match their proof.

Also, I will not be assigning the profile created for there proof to just
images, I will be using a devicelink profile and processing their PDF file
through AlwanColor CMYK optimizer with ink optimization turned off. Only the
profiles and the separations within the profiles will be used.

You might want to double check that upon creating the new profile from their
proof, and assigning it to the images in Photoshop, that the softproof (on
your calibrated/profiled monitor) matches fairly well the proof they
supplied you. If it does, your solution should work. If it doesn't, there
could be some further color voodoo going on that you aren't accounting for.
I'm assuming that the current softproof honoring SWOPv2 does not match their
proof.
