FWIW, the folks at Apple strongly discourage people from changing that
symlink. or so they say on the apple-java mailing list. Future
breakage, nasal demons, etc..

it can certainly be a PITA. I've got my own little VM switcher shell
script which does seem to work. All it does is set JAVA_HOME and adds
$JAVA_HOME/bin to the front of PATH. I typically don't try to switch
back and forth, but will rather switch once (if I need to) and open a
new shell/window if I need to switch back.
